That is, the wine is made and stored in the same container. The essence of carving vinification has changed little in over two thousand years. Generally speaking, the grapes are placed inside the carvings and fermentation occurs spontaneously.
It is said that somewhere in Georgia (Caucasus), here about 9,000 years ago, someone forgot a crock of crushed grapes in there, went to see, tasted, liked it was wine.
In Portugal, the main wine producing region is the Alentejo, being Vila de Frades considered the "capital" of the wine.
Carving wine is regulated by CVRA as PDO Alentejo wine, and the standards require and supervision proves on the spot that carving wine, to be considered as such, can only be separated from the masses on 11 November, or later. We LCAs generally only separated the liquid masses at the end of December.
Promoted by the Municipality of Vidigueira and with the involvement of 27 institutions, including municipalities of the Alentejo and other entities, is currently preparing the application of the production of the wine of intangible heritage to UNESCO Intangible Cultural Heritage. The amphora has a symbolic value. It was the most used clay porcelain format in antiquity. We challenged Oleiro Rui, from Olaria Patalim in S. Pedro do Curval to produce us two series of 100, one Arabic numbered and one Roman. To put the wine inside we use a flexible packaging. Wine is always the youngest red, Aragonese and trencher.

The name it’s a tribute to the wife’s producer, made with the finest grapes, selected rigorously during the harvest period. This great white wine is based on the varieties Antão Vaz and Arinto as the main one’s blended also with two other Alentejo varieties: Manteúdo and Perrum, allowing the wine to be even smother and lighter.
All ACV wines are the result of a rigorous choice of grapes at harvest. This "Escolha" of 2106, was made under the same premises of 2015. It has in its composition two traditional varieties of Alentejo, Antão Vaz and Arinto, which allowed a genuine, fruity and smooth white that allows a "conversation" entry that only The best are allowed.
Having got this wine, has dispelled all doubts about the possibility of getting great and the best wines with the method of vinification of the wine.
